Fried Zucchini and Yellow Squash

The other day at the grocery store, I was lucky enough to find some zucchini and yellow squash on clearance.  Knowing I had to use them that day, I figured the absolute best way to eat them would be to bread them and deep fry them. After all, is there really any other way? ;-)

Ingredients:

- 2 yellow squash
- 2 zucchini
- Canola oil
- Flour
- Paprika, Pepper, and Parsley to taste
- Salt to sprinkle over fried veggies (optional)


Directions:

1.  Wash your yellow squash and zucchini well and slice into coins, about 1/2 inch thick.

2.  Pour some flour into a bowl and season with the paprika, pepper, and parsley.  Bread your vegetables in the seasoned flour.  Set aside until all of your veggies are breaded.



3.  Begin warming your canola oil in a large skillet or electric skillet.  Once it's hot, place your veggie coins into the oil and fry until browned on both sides.  Remove and set on a paper towel lined plate.  Sprinkle with salt if desired.
