Tuna Pasta Salad

Summer is quickly approaching so I've been in the mood for easy to prepare dishes that won't steam up the kitchen and can be enjoyed outside. 

I came across this idea recently and loved it!  It's a pasta salad so I immediately knew I would find it delicious, but it's got the added protein of tuna involved which is a big plus for me.  

This can stand alone as a meal with some cut up veggies on the side, or you can serve it alongside some burgers and hot dogs too.

Ingredients:

- 1 (12oz) box of elbow macaroni
- 1 small bag of frozen peas
- 1 small onion, diced
- 2 cans of tuna, drained
- 2 to 2 1/2 cups of mayo (depending on how creamy you want it...I like a drier salad, so I only used 2 cups) 
- Salt and Pepper to taste




Directions:

1.  Begin boiling your pasta.  Once the pasta is almost cooked, toss in your peas and let the pasta and the peas finish cooking.  In the meantime, add your onion, may, and tuna in a large bowl and combine well.





2.  Drain your pasta and peas and run them under cold water until cool.  Add them to the bowl and mix well, then season with your salt and pepper.

I loved this!  It was so delicious and perfect for a warm day!  My kids felt otherwise (not big on the peas and tuna) but that was okay.  I had no problem eating their helpings in addition to my own. ;-)
