Asian Chicken Noodle Soup

This soup is one I tossed together quickly one night when I got home from work.  Of course, my children wouldn't touch it because of the yummy snap peas, but my husband and I weren't too upset....there was more for us ;-)

Ingredients:

- 2 Boneless Skinless Chicken breasts, cooked and cubed
- 1/2 head of a small Napa Cabbage, roughly chopped
- 1 Tablespoon Ginger, grated
- 3 cups Chicken Broth
- 1/4 cup Soy Sauce
- 1 bunch Green Onion, diced
- 1/2 bag of Snap Peas, cut on diagonal
- 1 Tablespoon Garlic
- 1 Box Rice Noodles

Directions:

1.  Start by chopping all your veggies and have them ready while you bring your chicken broth to boil.

2.  Toss in all your ingredients except for the noodles and begin to warm through.


3.  Once your veggies are tender, but still have a bit of a bite to the snap peas, add your noodles and chicken and cook until noodles are tender.
