Oatmeal Raisin Cookies

I admit I am normally not an oatmeal raisin cookie fan.  However this recipe for Oatmeal Raisin cookies I can get behind!  Nothing is better than munching on one of these cookies for breakfast with a glass of cold milk!  Yes, you CAN have cookies for breakfast!  Hey..it has oatmeal in it! ;-)

Ingredients:

- 3/4 Cup Flour
- 1/2 tsp. Baking Soda
- 1 1/2 tsp. Cinnamon
- 1/4 tsp. Salt
- 3/4 Cup Sugar
- 1/4 Cup Brown Sugar
- 1/2 Cup Butter, softened
- 1/2 tsp. Vanilla
- 1 Egg
- 1 1/2 Cups Oats- 1/2 Cup Raisins
**I must be getting old, but I just realized I did not include the flour in this photo!  This is the 3rd time recently!  Gah!

Directions:

1.  Preheat your oven to 375 degrees.

2.  Combine your flour, baking soda, cinnamon, and salt in a bowl and set aside.

3.  In a separate bowl, cream together your sugar, brown sugar, and butter.  Add in your vanilla and your egg and mix until combined. Combine your dry ingredients into your wet ingredients and blend together until well mixed.

4.  Stir in your oats and raisins and fold until the mixture is well combined and looks like cookie dough.

5.  Spray your baking sheets with non stick cooking spray and drop by tablespoons onto the pans.  Bake for 7-10 minutes or until cookie begins to turn golden brown around it's edges.

6.  Remove and place on parchment paper to cool.

Here's the final product....

Again, a glass of cold milk and you're all set!  So chewy and full of cinnamon flavor!  Try these out soon!
