Macaroni Salad

Macaroni salad's are so personal.  They're right there with coleslaw and potato salad.  Everyone's got their own take and everyone is very PASSIONATE about theirs!  I'm not that bad, but I do have certain things that I think Macaroni salad's in particular SHOULD have in them!  This is my version of macaroni salad. It's a bit dryer than your typical mac salad, but that's how I like it.  It's pretty much like my mom's but a bit of me thrown in ;-)

Ingredients:

- 1 box Elbow Macaroni
- 1 onion, chopped
- 1/2 cup bell pepper, chopped (any color)
- 1 to 2 cups Mayo (eyeball it per your preference)
- 4 Hard-boiled eggs, chopped (with or without yolks, your preference)
- Mrs. Dash/Paprika/Parsley/Salt/Pepper to taste


Directions:

1.  Boil your macaroni until tender.  Drain and rinse with cold water for a couple of minutes.




2.  Toss your eggs, and veggies into a large bowl.  Add the macaroni.  Mix up and add the mayo.  Stir around to make sure everything is coated.  Add your seasoning and mix again. 






3.  This is important....TASTE IT!  You won't know if it's good unless you do, so give it a small taste and add more of whatever it needs to make it delicious!  Transfer to a container and refrigerate for at least 2 hours before serving.
