Spicy Chorizo Scramble

Chorizo is a Mexican sausage.  It's spicy, greasy, and delicious!  So a Chorizo Scramble is all of the above and more!  Pairing it with some potatoes, onions, etc it becomes an over top tasty meal, creating a hearty breakfast that will leave you full way into lunch time.

Spicy Chorizo Scramble

- Chorizo
- Red Potatoes (cut into cubes)
- Onion (diced)
- Jalapeno (either jarred or fresh.  If you go with fresh, dice it up first)
- Mushrooms (either canned or fresh.  Fresh is obviously better, but I only had canned here)
- Black Pepper
- Red Pepper Flakes
- Garlic Salt
- Parsley
- Cumin

1.  First, cut up all of your ingredients and remove the chorizo from it's casing.  Disregard casing.


2.  Set pan on med heat and crumble chorizo into pan.
 3.  Allow to cook until almost done, getting a nice glisten of the oil from the chorizo onto the pan.  Remove chorizo to a bowl and set aside.

4. Place the potato/onion/jalapeno/mushroom mix into pan, adding a bit of olive oil if needed.  Season with the seasoning listed above, cover, and cook until potatoes are done. 

5.  Add in chorizo and allow mixture to marry together until fully cooked.

6.  When everything is done and browned, turn off pan, spoon mixture into bowl or plate and serve!

This is pretty spicy, so consider yourself warned!  However, the flavor is amazing, so a bit of burn is worth every bite!
